What do you do and how did you get into the industry? 

I joined this industry over 20 years ago because I have always loved cooking. I started at Amari Coral Beach Hotel Phuket as an international cuisine Chef, then moved to JW Marriott Phuket. Years ago I came to Twinpalms as Sous Chef of Catch Beach Club. I also learnt and grew at Flame Restaurant from Twinpalms Group. Now I work for Catch Beach Club restaurant as a head chef.
What’s the best/ worst part of your job? 
The best part is simply enjoying live cooking. It’s interesting to say, but I do really love to cook pizza.
Sometimes the work can be crazily busy, but there isn’t the worst part of my job.
What’s your personal favourite meal?
My personal favourite is a special Thai dish. It is made with deep-fried fish curry with parkia speciosa (Southern Thai vegetable).
What’s one of the craziest things you’ve seen behind the scenes?
I would say the White Party we hosted at Catch Beach Club. We reached nearly 3,000 guests which sent the kitchen crazily busy that day. But it was also a very fun night: all kitchen staff enjoyed the party atmosphere as much as the guests did. It’s the biggest party on the island, and in my personal life as well.
The perfect day off would be… 
… having a nice sleep, hanging out with friends, watching a movie, etc. Just normal routine.
Life in the day of a chef is… 
A working day starts with stock-checking and reviewing the market list. Then I will check the restaurant and brief my team. After that begins the food preparation and cooking, the very joyful part. Then I finish one day of work. The time always passes so fast.
What do you do for fun?
Same as other people in Phuket – we enjoy partying and relaxing.
What’s something you’d like guests to know about the cuisine prepared at Catch Beach Club? 
I would recommend the “WOW” collection at Catch Beach Club restaurant. This includes Grilled Wagyu, Grilled Boston Lobster, Japanese Platter, Chilled Seafood Tower and Catch “Dream” Burger. All dishes are created for two or more persons to share, suitable for cheerful seaside dining with the beloved and friends.
How do you select your ingredients and why? 
Quality and natural flavour come as the top concern.
What can guests look forward to in the upcoming months?
We will have a new menu coming for our sister beach club, Bimi Beach Club and Bongo Rum Bar. It will intake more elements from a Greek and Mediterranean style.
