Our two favourite yee sangs this year are from Copaa and Tucker & Co. Both feature the kitchens’ home-made sauces, which manage a balance between tart and acidity. Of course, the rest of the ingredients are superbly fresh and crisp, each with its own special combo. We love that Copaa’s base is vegan (you can top up with various seafood if desired), and the torched shiro maguro on Tucker & Co’s is a highlight.
