Maison Boulud Singapore – Marina Bay Sands

Singapore certainly doesn’t lack restaurants where you can spend a moment enjoying the finer things in life. While linen table tops and crystal glasses are in plentiful supply, what can be harder to find is somewhere special that offers a chance for different types of experiences, all presented with impeccable style and a confident sense of excellence with every dish. Maison Boulud, a recent arrival on two levels of The Shoppes at Marina Bay Sands, is just the location to find all of these special elements.
Its namesake is Chef Daniel Boulud, a world-renowned restaurateur and multiple Michelin star winner for his restaurants that are now located in ten cities around the world. Singapore is fortunate to now host its second Maison Boulud, an elegant dining concept aiming to elevate French cuisine.
Maison Boulud Singapore – Marina Bay Sands
The setting is a phenomenal design by Joyce Wang, a Hong Kong interior designer with her own impressive accomplishments across the globe. Evoking the French Riviera with modern and art deco embellishments, guests will instantly feel comfortable as they step inside from the bustling mall. Level One offers views of the Singapore skyline across the bay, as well as a chance to feel more Parisian by virtue of becoming an avid people-watcher of all the action that happens just outside.
Maison Boulud Singapore Menu & Prices
Fine dining is a concept that can sometimes be too overdone, even intimidating to the unfamiliar. What is such a great aspect of Maison Boulud is the accessibility it offers to guests with its different menus. We were invited to experience the Weekend Prix Fixe menu, which features a three-course meal and a glass of wine. Priced at SGD 88++ per person, this is an incredibly affordable chance to have fine dining, excellent service and gorgeous views in an iconic Singapore location.
Prix Fixe – Viennoiserie and Entrée
After our lovely server, Aria takes us through the menu and pours some sparkling water with lemon, we receive a basket of warm croissants, pain au chocolates, housemade fruit jams and unsalted butter. Oh, French food! How I’ve missed you! Everything is buttery, flaky goodness and an excellent way to commence a meal on a dark and rainy day.
Our party of three selected different items from the menu, which offers four choices for each course. The food all arrives in a timely manner, and everything is plated beautifully. The Asperge Gribiche is seasonal white asparagus dressed to the nines and served with a hard-boiled egg vinaigrette, a zesty sauce that complements the perfectly finished asparagus spears.
Crustacés Niçoise is one of the freshest seafood salads I have ever had, with the right amount of crunch from the crudités and a basil pesto sauce. I must confess that once I discovered just how delicious my choice of the Lobster Bisque Soup was, I really did not share any of it. I stand by my decision, as this velvety blend of Maine Lobster chunks, Armagnac, chive oil and potato and leek crème fraîche could have been the only thing I ate that afternoon, and I still would have raved about my visit.
Prix Fixe – Main Course & Wine List
As we strived to offer you, our readers, the best insight into Maison Boulud’s menu, we once again took our orders for main courses in three different directions. I can assure you that all three, at some point, resulted in excited, tiny little rounds of applause around the table as we savoured the sights and smells of Chef Daniel’s expert knowledge combined with his desire to present inspiration from his favourite home-cooked meals growing up in Lyon.
The Coq Au Vin had a fragrance that could be bottled and sold all on its own. A red wine-braised free-range chicken served in a steaming pot with mushrooms, bacon, carrots and spätzle, which are European egg noodles. This generous portion was rich in flavour and again ideal for a rainy day. Opting for a non-alcoholic option from the menu, Caning was impressed by the sweet and fresh tanginess of the Strawberry Crush, a blend of ginger ale, yuzu and strawberry purée.
For something lighter yet still bursting with flavour, the Saumon Asperge features Ora King Salmon, watercress, buckwheat beurre blanc, asparagus and salmon roe. This paired nicely with a glass of 2022 Chateau Favray, Pouilly-Fume Sauvignon Blanc, and its balance of mineral and fruity notes enhanced each morsel of the tender fish.
I rarely order red meat as a main dish but I was determined to try something different for this meal, so the Filet Mignon appeared before me, accompanied by patatas bravas with paprika butter and broccolini. It was executed perfectly, and I’m not sure when last I ate meat that was more similar to butter in its mouth-watering consistency. I ordered a glass of the 2020 Tenuta Di Arceno, Chianti Classico DOCG, and this medium-to-high acidity, big and bright Italian Sangiovese tasted like it was made to be paired with Australian Prime Tenderloin.
Maison Boulud Singapore Desserts
Concluding our delightful and very filling culinary journey were selections from the dessert portion of the menu. A classic Fromage platter features Comté, St Nectaire, and Bleu d’Auvergne cheeses, with fresh slices of apple and a fig and raisin chutney.
The Tarte Citron Meringuée is an eye-catching presentation of lemon tart and lightly torched Italian meringue. If you prefer a darker sweetness for dessert, the Chocolat Coulant is a molten chocolate cake served with a warm raspberry sauce and almost impossible to share with others. We ordered coffee to go with dessert and were very satisfied at the end of the meal—saving one more round of tiny applause for the unexpected arrival of a set of Daniel Boulud’s signature warm Madeleines.
Reasons to visit Maison Boulud Singapore: the Prix Fixe menu is a fantastic way to enjoy a meal somewhere special that, for a few hours, transports you away from South East Asia and into the comforting richness of French cuisine. Everything is excellent and effortless, and Maison Boulud just became this new resident of the island’s go-to place when I want to escape the hawkers and show my visitors a more luxurious side of Singapore. Mon’s impressed with the well-chosen wine-by-the-glass list, too.
