Dome, the latest food and beverage opening at Desa Potato Head Bali, is blue-tiful! The floors, pillars, the seating it-s all blue. The only thing that isn’t blue is the spirit. Here the mood is much more cheerful! Delivering natural food and wine, it’s a popular place to dine in Seminyak, and we’re excited to taste their menu tonight.

The rounded Dome restaurant walls hold an eclectic ambience. International retro melodies create a nostalgic backdrop, and wooden tables are complemented by tropical foliage. At the restaurant’s heart, an open kitchen reveals flames, billowing steam and chefs in action. Local sculptures from Indonesia’s eastern regions, particularly Papua, add cultural nuances. Book-lined shelves invite diners to explore literary treasures while enjoying their meals. We arrive early, at opening time, so we get to witness the “dome” bathing the setting in natural light, morphing to a warmer evening illumination.
Natural Food & Wine Menu
Committed to local agriculture and sustainability, this restaurant champions natural ingredients from organic farmers and regional producers. Chef Diego Recarte’s menu reflects his global experience, with South American and European influences reinterpreted through a modern lens. To Begin
The Oyster Mignonette (IDR 50, 1 piece) is a bright and refreshing start. They’re not too briny and a little creamy. It’s wise to try them naked, but the vinegar, pepper and herb sauce is also worth a splash. We can see why the Clam Croquettes (IDR 40, 1 piece) are top orders. The crisp coat breaks way to a creamy, sea-filled middle. Delicious. We pair them with a glass of local sparkling Lazarus Pulp (IDR 185). I would have hesitated to consider Balinese wines more than a novelty a few years back. However, I first tried this bubbly at Room4Dessert and found it highly enjoyable. The pet nat is made from imported grapes but produced locally. It’s dry and refreshing, an excellent aperitif and a companion to our seafood courses.
Bring on the Veggies
Cabbage Cannelloni (IDR 120) is another top order. Roasted pumpkin and miso cashew pesto are wrapped in a delicate cabbage leaf. The miso brings new dimensions to the veg, and the contrast with the light crunch of the cabbage and soft pumpkin and cashew is delightful.
Grilled Baby Corn (IDR 85) proves, yet again, that vegetables are not boring. Baby corn is served alongside charred sweet corn in a creamy hollandaise sauce with morning glory and potato crumb. The sweet creaminess is sliced through by the high acidity of the 2022 Franck Massard Mas Amor Verdejo from Manzanares, Spain (IDR 175).
Peru or not?
Knowing a Peruvian chef is heading the kitchen, we must try the Ceviche (IDR 150). It’s not what I was expecting. There’s no corn or sweetness. Instead, it’s on the salty side. This is thanks to fermented ponzu and morning glory. It also has a light pepperiness in the finish—a tempting twist. Pomelo supplies familiar acidity, while fermented champignon mushrooms add umami depth.
Main Sharing Plates
We go with Roasted Octopus (IDR 150) and Grilled Tenderloin (IDR 300) for our main plates. The octopus comes with chimichurri, although the dominating flavours lean more towards barbecue sauce (in a good way). The sea creature is coated in a sweet glaze, while the accompanying veg of morning glory, roasted baby potatoes, jicama and okra is donned with the chimichurri salsa. The beef is lightened with chicken jus, oyster mayo and sweet mustard seeds.
Our partnering glass of 2019 Felline Anarkos, Puglia (IDR 185), brings us back to happy gourmet travels in southern Italy. It’s distinctively Apulian with its blend of Malvasia Nera, Primitivo, and Negroamaro, gifting an enticing nose of ripe cherries, leather, and earth. It’s a delicious and happy wine, tasting of its terroir. It’s a very good choice for beef.

To conclude, the Vanilla Flan (IDR 80) is enticingly creamy, with a light caramel sauce and whipped cream on the side. Caning exclaims that it’s the best flan he has ever tasted. Coming from the Venezuelan sweet tooth with quesillo as the national dessert, this is high-acclaim. The accompanying wine pairing is a delightful surprise—the local Yellow Sky Passionstar (IDR 180) wine. The blend of passion fruit and star fruit balances sweetness with a light tang.
