In this interview, Joyin Goh, Junior Sommelier at Entier French Dining, tells a little about what her job entails and her favourite food and wine pairing.

What do you do?

I am a junior sommelier at Entier French Dining, where I curate wine selections and pairings for all guests and provide service.

How did you get into the industry?

During my university years, my lecturer in oenology inspired me. I became interested and wanted to learn more, so I signed up for a WSET Level 2 class to explore wine theory further. After completing this class, I decided to pursue a career as a sommelier.

What inspired you to become a sommelier, and what do you enjoy most about your role?

The fun of food pairing really inspired me, especially since I’m a foodie myself. I love discovering how different wines complement various dishes.

As a young female sommelier, what unique perspectives do you bring to wine selection and pairing?

Gender doesn’t affect my approach, but as a young sommelier, I bring a fresh and enthusiastic perspective into wine selections. With two years of experience, my approach is shaped by my passion for exploring different wines, and I often include those I’m excited to try in our selection with the help of the restaurant manager.

A day in the life of a sommelier is …

A sommelier’s day involves constantly studying wine, training the team, and discussing wine. I also often interact with customers to understand their preferences and curate personalised wine pairings for them.

What’s one of the wildest things you’ve seen behind the scenes?

One of the wildest things I’ve seen behind the scenes was a customer showing up in a swimsuit! Another memorable moment was when I got a bit tipsy after an intense wine-tasting session right in the middle of operations. Thankfully, the amazing team was able to cover my shift for a while so I could calm down.

The perfect day would be …

Sitting down all day with my laptop, menus, wine lists, and all my resources to study and concentrate on wine.

What does Joyin Goh do for fun?

I enjoy cosplay, watching anime, and spending time alone for fun.

What’s one of your favourite food and beverage pairings?

Tuscan wine and steak.

What’s something you’d like guests to know about Entier?

The team puts a lot of hard work into curating our wine menu at Entier. Our goal is to ensure that customers can explore a wide variety of wines from different types and countries in the comfort of Entier.

What’s your wine preference as a sommelier yourself?

Red wine, specifically from Tuscany, because it is bold, structured and complex.

What are the key elements of creating a memorable dining experience?

Excellent wine and food pairing, always succeed in doing so.

The perfect day off would be…

I spend time on my hobby and while doing grocery shopping. I love to browse the wine section along the way.
