Coconut palms arrayed the length of the valley make a postcard perfect backdrop for an afternoon of tea, cakes and savouries at CasCades, Viceroy Ubud.

High Tea comes as a set including assorted sandwiches and sweets with a pot of coffee or tea. A singular rectangular tray holds the line up making it quite a manageable platter and a fitting in-between-meals snack.

Be sure to take the local favourite, banana fritter, with cinnamon, coconut and salted caramel first. Best eaten while hot, it puts a huge grin on hubby’s face and he quickly jumps in before I pop mine in my mouth so kindly offering, “If you don’t want it, I’ll have it.”  I smile a look of, “No chance buddy,” and devour the hot treat just as quickly.

A trio of assorted sandwiches made on white bread with crusts removed, contain smoked salmon, chicken and cucumber. Bread is fresh, as are fillings, and they make a standard high tea participant.

A troupe of petite sweets furnish a mixed bag of crunchy, creamy, chewy and spongy,

A soft brownie is moist and chocolaty and fills the sides of the mouth with a sticky deliciousness.

A dainty white chocolate biscuit round is covered with a cloud of lime mousse. This coalition of sweet and sour is a happy marriage.

A triangle of a French classic, the financier, features a springy moist core, golden exterior and is rimmed with a sprinkling of raisins.

White chocolate cannoli with caramel mousse is the sweetest of them all and a soft lovely moosh in the mouth.

The chewiness of the thick coconut cookie makes a direct contrast to the melt-in-the-mouth cannoli and at the same time is just as pleasurable.

Changing consistencies again, the marshmallow coated in shredded coconut, vanishes upon touching the tongue almost immediately but leaves a memory of sweet coconut on the taste buds.

Coming back full circle, we finish with a return to local traditions with the delicate pancake rolled with coconut and palm sugar.
