Spaghetti Alla Carbonara Recipe

The Yum List asked some of our favourite chefs around Kuala Lumpur what’s cooking in their kitchens during Malaysia’s Movement Control Order. Today, Chef Helmut Lamberger from Impiana KLCC shares his recipe for Spaghetti Alla Carbonara.

Spaghetti Alla Carbonara Recipe

(for 4 pax) Preparation time – 20 minutes

This is an all-time favourite from Rome in Italy. In my many years traversing the culinary globe, my most-loved dishes remain to be homestyle recipes such as this spaghetti alla carbonara. It’s easy to make and a real crowd-pleaser. While the traditional recipe doesn’t contain cream, this one does, make the sauce extra rich.

Ingredients

400 – 450gm spaghetti (preferably size Nr 5)
50gm butter, unsalted
300ml cooking cream
80gm white onions, fine chopped
60gm cured turkey sandwich loaf, cut in strips
(can be optional replaced by smoked beef brisket or simply sliced chicken breast)
50gm white button mushrooms, sliced
2pcs egg yolk
50gm Parmesan cheese, grated
Salt
Black pepper
Fresh parsley, chopped

Method

SPAGHETTI
Set a large pot with water, add some salt and bring to the boil.
Add the spaghetti and stir once in a while until the texture is al dente. Strain off the water.

CREAM SAUCE
In a large skillet, add the butter and white onions. Fry until golden brown.
Add the turkey strips and mushrooms. Sauté for a short while.
Add the cream and reduce heat. Season lightly with salt and pepper. Reduce slightly.
Take the skillet off the heat and quickly work in the hot spaghetti, egg yolks, parsley and cheese. Stir well.
Sprinkle more cheese, chopped parsley and serve immediately.

Tips

You can replace half of the cooking cream with milk to make the dish less heavy.
You can substitute Parmesan with Gouda or Emmental.

What does al dente mean?

The centre of spaghetti shows a tiny white spot, which gives a slight bite to the pasta.
