The annual #DineWithChef series at Grand Hyatt Kuala Lumpur returns with a celebration of local and international cuisines through a hotel takeover. The series will be held throughout the hotel, including events in THIRTY8 and JPteres, the semi-alfresco POOLHOUSE, and the recently launched event space on Level 5.

#DineWithChef 2024 – Grand Hyatt Kuala Lumpur

This May, #DineWithChef will showcase several gastronomic collaborations between the Head Chefs from Grand Hyatt Kuala Lumpur, Park Hyatt Kuala Lumpur, and Hyatt Centric City Centre Kuala Lumpur. Visiting chefs from Indonesia, Poland, Japan, and Malaysia will also offer their expertise in curating innovative meals for guests.

Embodying the Hyatt ethos of “Food Thoughtfully Sourced, Carefully Served,” local eco-conscious suppliers Cultiveat provide vegetables to the kitchens at Grand Hyatt Kuala Lumpur. They have transformed the 3,500-square-foot event space on Level 5 into a multipurpose indoor farm. They grow produce and host experiences here, making the hotel a hub for sustainability excellence.

Grand Hyatt Kuala Lumpur – Executive Chef Grzegorz Odolak, more commonly known as Chef Greg, is at the helm of the 2024 #DinewithChef series. “I would like to present Polish food, especially to Kuala Lumpur. So basically, tasty, local, authentic food from my country.”

Park Hyatt Kuala Lumpur – Executive Chef Stig Drageide and Executive Pastry Chef Holger Deh offer diners a sneak peek of the dishes that will be served at the upcoming Park Hyatt Kuala Lumpur. Both chefs have experience in the kitchens of Michelin Star restaurants. 

Hyatt Centric City Centre Kuala Lumpur – Executive Chef Vincenzo Carbone, or Chef Enzo, as he is affectionately known, promises to showcase authentic Italian cuisine with personal flair.

What to Expect

The Yum List team were given a special teaser experience of the #DineWithChef menu items. Here’s the kind of flavours and dishes you can expect.

Smoked Salmon Tartelette

Elegantly crafted with fresh dill and horseradish cream, it presents flavours that are as refreshing as they are robust. The smoked salmon is the star of the dish, offering a delicate smokiness that melds seamlessly with the zesty kick of the horseradish.

Soba Miso Glazed Tofu

The combination of eggplant, portobello mushrooms, and edamame is brought together with a gentle miso glaze, which is slightly sweetened with honey. Fresh coriander and spring onions lend a burst of freshness to the ensemble.

Crispy Sustainable Prawn

Each bite of prawn is meticulously wrapped in a crisp coat of toasted black and white sesame seeds, providing a delightful crunch that contrasts beautifully with its tender, succulent interior. The kaffir lime-infused chilli sauce delivers a gentle yet invigorating kick of spice.

Smoked Black Angus Beef Tartare

This dish artfully balances texture and flavour. The velvety softness of the finely chopped and smoked Black Angus beef is further elevated by the addition of burnt leek powder and apple wood sorrel. The innovative accompaniment of a crisp, sweet potato waffle adds a delightful crunch that contrasts the meat’s softness.

Wild Mushroom Risotto

The risotto is masterfully prepared to a creamy consistency accentuated by the richness of Parmigiano Reggiano and the deep earthy flavour of wild mushrooms. The grains are cooked al dente, offering a slight bite that is a hallmark of expertly crafted Italian risotto. Generously embellished with summer black truffles, the dish is elevated to a luxurious level.

Mille-feuille  

Indulging in a slice of history with a remarkable culinary feat was a Malaysian record-breaking mille-feuille, stretching an impressive five metres. Dragonfruit, strawberries, dark chocolate shavings, caramel and milk chocolate drizzles, coconut cream, and classic custard make a pretty array on top.
