I love the story of their menu and choice of ingredients. When I started Cotta back in 2021, they were my neighbours. They have a great team and keep all the parts working together as a unit, creating an exceptional experience from start to finish.
The owner, Jon, isn’t from a food and beverage background, so his approach to his menu is unique and inspiring. I love Copaa because he’s an underdog, just like me. It’s so comforting seeing him push on and do well. It is extra inspirational and motivational for non-F&B people to know they can also start their own restaurant! His menu is good value for money and served in a casual yet stylish setting.
I love founder Ning’s storytelling, but more importantly, his ability to communicate his passion and knowledge of chocolate, which makes you leave learning something new. His chocolate is proudly Malaysian and multi-award winning—the only chocolate our editor, Monica, ever eats, so that’s saying something.
Their amazing technique for Indian food blew me away. Just check out the giant tandoor ovens in the glass-walled kitchen. Match that with a contemporary setting and excellent service; it’s a good night out.
I’ve always had a soft spot for JungleBird (as they were my neighbours when I started Cotta in 2021). I’m always inspired by Lolita’s flavours, the intricacy of her food, and the methodology for the rest of the menu. Josh has been an industry leader for years, and the team – Josh, Divy and Lolita – sure know their stuff. Their rum menu is mind-blowing.
