Heat-at-home Meals – Troika Sky Dining KL
Monica Tindall
Times have certainly been tough for the food and beverage industry over the past year. It hasn’t been all bad, though, at least from the consumer perspective. Unlike any other time in history, we now have access to incredible meals that previously we’d only be able to enjoy in a fine restaurant. Innovation of systems has made quality meals in all varieties accessible and convenient. Troika Sky Dining’s heat-at-home meals are an excellent example.
Heat-at-home Meals – Troika Sky Dining KL
Troika Sky Dining’s heat-at-home meals offer chef-prepped dinners delivered to your doorstep. All you have to do is heat and plate them. They provide the advantage of food delivery but give patrons just enough hands-on activity to gift a sense of accomplishment at the same time. Additionally, putting the finishing touches on the recipes ensures freshness and optimum serving temperatures, which are sometimes lacking due to travel.
Several cuts of beef and lamb are on the heat-at-home meals’ menu. We tried the Saltbush Rack of Lamb last MCO, and today give the Black Angus Pure Beef Tenderloin 500gm (RM 240) a try.
Delivered in a box with clear, detailed instructions for heating, it’s an easy meal without compromising quality. The beef is rubbed in a deliciously spiced pepper marinade. It is accompanied by savoury porcini bread and butter pudding, a vegetable blanquette and Bordelaise sauce.
The tenderloin and pudding are heated in the oven. At the same time, the sauce and vegetables are readied in a pot of boiling water. Once ready, all there is left to do is open the wine and carve the beef. And, what a beautiful specimen it is. Even with my limited meat-cooking skills, the tenderloin has turned out perfectly. The edges are charred from the grill, and the centre is evenly pink and tender.
The sides are fantastic too. A light tang to the veggie stew makes it addictive. The warmth and familiarity of the mushroom bread pudding are comforting. We think there is plenty of flavour in all of the components not to require the Bordelaise sauce. However, we’re not wasting this beauty. We plan on keeping the sauce to liven some of our own recipes later in the week.
Wine
It would be a shame to consume such a meal without wine. Food this good deserves a mate. Fortunately, the team at Troika have preselected appropriate drops as partners to their heat-at-home-meals.
Owned by the same family for over 300 years, Domaine de Pellehaut certainly has some history to the name. Their 2018 Gascogne Red (RM 165) that we have with the tenderloin seems to bring those years of wisdom and experience to life. It’s a wonderfully balanced red, showing both fruit and oak, depth and silky tannins. While it has enough substance to stand by the meat, it is light in character and well-suited to the warm Malaysian weather. We enjoyed it a little chilled.
