dining room at Favola, Le Meridien. Dramatic red and maroon curtains drape from
the high ceilings and black and white wall murals with bursts of red depict
Venetian architecture and classical masquerade parties. Sculptures and giant
vases add interest and, heartfelt Italian tunes caress the air. The long wooden
tables are set with red tumblers and blanketed with rose petals. The room is
ready for Valentine’s Day and so is the kitchen.

sorbet. Attention to individual plating is more and more evident as the meal
progresses. This dish arrives on a long thin platter with the three dishes
uniquely portioned – sorbet in glass lidded bowl, tuna a perfect rectangular
prism atop wafer thin slices of radish, and the citrusy seafood salad hiding
amongst a bed of bushy lettuce.

sausage, pumpkin tortelli, squid ink mayo and snap peas is the ocean selection.
This beautiful spring themed platter is swept with a fat paintbrush stroke of
squid ink mayonnaise and speckled with micro greens, petite peas and rounds of
red and yellow vegetables.

Cialda al Cacao – cherry soup with yoghurt ice cream and chocolate
wafer makes a sweetly spectacular finish. Terrifically creamy ice cream slowly
melts into a slightly tart cherry bath and contrasts in texture to the delicate
caramelized chocolate wafer sombrero.
