Narinder Kaur, co-owner of Roti Chai, chats with The Yum List about her change in career path and what goes into starting a new restaurant.

What do you do and how did you get into the industry?
My family always get excited when we talk about food! We are real foodies with refined taste buds. That’s why my family and I decided to open up our very own food chain featuring northern Indian food. I and my brother Jasvinder got involved in the industry as soon as we left our full-time jobs.

Share with us an interesting story from behind the scenes.
Every day involves lots of work such as planning, checking and discussions amongst the team. Lots of meeting with staff regarding, monitoring the quality of all food and cleanliness of the restaurant. During our free time, we love to do experiments with food and drinks to come up with some exciting new menu items.

What’s the best/ worst part of your job?
The best part is interacting with customers and, of course, when they love the food.
The worst part is the wastage of food.

What’s your favourite meal and drink?
My favourite drink here is Cold Bru Coffee. Bru coffee is an Indian brand coffee and we make it by blending it with ice so that it will be creamy.
My favourite meal is the butter chicken. This dish really reminds me of what I had in Delhi, India.

What’s one of the craziest moment you’ve had behind the scenes?
Starting up the restaurant was the easy part, running it though is really tough and hot! We take every order as important as we don’t compromise on the food quality and taste.

The perfect day off would be…
… quality time spent with the family and catching up with friends.

What do you do for fun?
Food hunting, of course!

What’s something you’d like guests to know about Roti Chai?
We want our guests to recognise the uniqueness of flavours that we serve. We also do catering for family and corporate functions.

What’s your signature food and beverage pairing?
Our signature dish, Roti Chai Chicken with Garlic Naan goes well with Masala Chai. Heaven!

What’s your view on the restaurant scene in Setapak?
We’re surrounded by customers from all walks of life – students, homemakers, and working adults and so the restaurants cater to this.

What’s in store for you in the upcoming months?
We will come up with new items for the menu such as Naan Tikka Roll and set lunch menus. There will be more choices of yoghurt drinks coming up too!
