  • Since posting, the team at FLOUR has temporarily paused delivery to focus on the reopening of their restaurant in a new location towards the end of May.

In between locations and in the preopening phase of a new premise, the team at FLOUR Dip & Eat have curated a menu, especially for food delivery during the MCO. The to-go list is a variation of what regulars know from the dine-in compilation. Designed to withstand being packaged, transported and possibly reheated, the recipes are a little more robust. What is unquestionably the same, however, is chef Yogi and the team’s attention to detail and care in preparing the food. Everything is made from scratch, and even the packaging resembles a gift with its bows and sleek black bags.

Chicken

I know it seems so westerner of me to have Butter Chicken (RM21) at the top of my order, but it’s with good reason! This creamy, tomatoey gravy is so luscious that I don’t even need the poultry. Even once the protein is gone, the sauce continues to be sopped up with a piece of roti until the bowl looks as though it’s come straight from the dishwasher.

Mutton

Today is my first taste of FLOUR’s Punjabi Meat Masala (RM22+), and I’m glad for it as I’ve heard great things. This thick curry coats the entire mouth with a delicious blend of tomato, ginger, garlic, onion and more… The chef is not around to ask, so my taste buds are on their own to figure out the intricacies. I’m sure there’s a story that goes with it, but for that, you’ll have to wait for the reopening towards the end of May.

Punjabi Meat Masala

Vegetarian

One of my favourites from this menu is the Tandoori Paneer Curry (RM17+). Homemade cheese that has just the right amount of spring to it is the highlight. Another meat-free dish worth an order is the Bhindi Curry (RM17+). Okra, or you might know them as lady’s fingers, are cooked until soft in a mildly spicy masala curry. Onions and tomatoes are dominant ingredients, but I think I’m also tasting ginger, garlic, cardamom and possibly a clove or two.

Bhindi Curry

Rice

Chef Yogi has insisted on my past three visits to FLOUR that there must be at least one rice course. And when they’re done as exceptionally as they are here, do follow the chef’s advice!

Lovely, leggy grains of rice surround a hearty shank in the Lamb Shank Biryani (RM50+). This beauty is big enough to feed at least two but needs a day’s advance order to prep. Hyderabad in style, there’s a significant level of spice in the profile. Although the heat has character, it does not detract from the other seasonings in the recipe. Providing a meat-free option, the Veg Biryani (RM20+) is an easy and satisfying meal. Similarly attractive grains of rice are aromatic with spice and tossed with mixed vegetables.

Bread

Bread is a must at a restaurant called “FLOUR”, and I recommend both the flat Tandoori Roti (RM8+) and puffy Puri (RM8+) made on the more nutritious whole grain. The former is made of wheat flour, and the latter has the addition of semolina. Apparently in the past, village folk of India only ate whole grain bread. White, refined flour was more work and more expense. In a more contemporary context it’s the reverse with wholemeal flour considered healthier and hence pricier.

Wine

Fine food deserves fine wine, and we enjoy this meal with a bottle of organic Triennes Les Aureliens 2015. This blend of Cabernet Sauvignon and Syrah is effortless drinking with plentiful fruit in the mouth, lovely aromas of red berries and an elegant thread of spice. While this wine is not currently available for delivery, we were introduced to the label at FLOUR and know that it does well with the menu here.

  1. Oh my! Now you’ve made me miss the mutton biryani and all the delightful stuff at our favourite Indian place here. Maybe I shall have to go and order takeaway from there one of these days.
