Quite the opposite of clinking flutes and dusty cellars, Champagne Carbon is the enfant terrible of the Champagne world, a rebel with a cause (and a very expensive bottle).

This isn’t your grandfather’s bubbly. Here, luxury meets cutting-edge, and the vineyards whisper secrets of generations past into bottles adorned with sleek carbon fibre. At a bubbly paired dinner at La Fleur by LamboCellar, we dove into the audacious world of Champagne Carbon, where tradition gets a high-octane makeover.

Champagne Carbon is a unique Champagne house that stands out for its avant-garde and perfectionist positioning, where every detail counts. Alexandre Mea, Champagne Carbon’s founder, is the fifth generation of the Devavry family Champagne house. With a 15-hectare estate, the winery’s excellence is attributed to the exceptional quality of its grapes and traditional techniques. Their champagnes are positioned as high-end products with prices ranging from €230 to €750 (roughly RM950 to RM3000) with select vintages in limited editions.

La Fleur by LamboCellar

At La Fleur by LamboCellar in Publika, we tried three labels from Champagne Carbon – Carbon Cuvée Sunset White Luminous, Carbon Cuvée Bugatti 3B01 Luminous 2002, and Carbon Cuvée 3B.02 Chiron 300+ for Bugatti Vintage 2006. These were paired with a five-course French-inspired menu by Chef Alex Chew. Sommelier Gilbert Byron led us through the wine mates, and LamboCellar’s CEO, Dato Jason Yap, shared his connection to and passion for the product.

Bubbly Food Pairing

The meal began with a simple amuse-bouche of a cracker topped with compote and brie.

Carbon Cuvée Sunset White Luminous

The first course featured Salmon Tartare with zesty lemon, dill ricotta, and crisp cress salad paired with Carbon Cuvée Sunset White Luminous. This Champagne shines gold in the glass, a blend of 90% Meunier and 10% Pinot Noir. The bouquet is pleasant, with ripe berries and stone fruits with vegetal undertones. Those stone fruits follow through on the palate, integrated with spring blossoms and fresh mint. This one was a little on the sweet side for my personal preference, but I bet it would be a crowd-pleaser as an aperitif or sundowner.

Carbon Cuvée Bugatti 3B01 Luminous 2002

Paired with handmade pasta and seafood in a pomodoro essence, we next tasted Carbon Cuvée Bugatti 3B01 Luminous 2002. A blend of 90% Chardonnay and 10% Pinot Noir, this Champagne presents a golden complexion with fragrant floral aromas. Delicate bubbles dance amidst notes of light green fruits and nuts, leading to a refreshingly crisp conclusion—very nice.

A cool and refreshing Crystal Pineapple and Mint granita cleansed the palate between courses. 

Champagne Carbon Cuvée 3B.02 Chiron 300+ for Bugatti Vintage 2006

Lastly, Carbon Cuvée 3B.02 Chiron 300+ for Bugatti Vintage 2006 was complemented by Refined Coq au Vin served with mashed potatoes. This 100% Chardonnay offers a complex bouquet from a pale gold hue with straw undertones. Initially floral, the aroma gradually reveals nuances of acacia, hazelnuts, and stone fruits. I greatly enjoyed this one, imagining it also as a fine mate to finely shaved charcuterie, caviar, and happy occasions.

Champagne Carbon Menu & Prices

Guests can replicate this experience with the menu available until June 30, 2024. Various pairing options start at RM 358 for food and RM 958 for the bubbly pairing. Diners wanting to take home a bottle for themselves can enjoy a 20% discount on any bottle from the Champagne Carbon collection. Booking ahead by at least three days is recommended to ensure availability.
