In this interview, Chef Jack Yeap, executive chef at Cheong Fatt Tze and Indigo Restaurant, shares several culinary memories and reveals some projects coming up at The Blue Mansion.

What do you do and how did you get into the industry?

I am the executive chef at Cheong Fatt Tze – The Blue Mansion in George Town, Penang. I developed a passion for cooking from loving to eat since I was a child.

Share with us an interesting story from behind the scenes.

I got a piping hot cast iron pan thrown at me during a busy service once, by my chef because I missed a spot when I was searing my côte de boeuf. Thankfully, it was a near miss! I got back straight to cooking immediately after – it was like nothing happened because the show must go on. Scared sh**less nonetheless 🙂

What’s a food memory from your childhood or travels that stands out?

Cooking mussels for people whom I just met during my stay in Blenheim, and making gluhwein for them after that as it was cold night.

What’s the best part of your job?

The best part is seeing guests’ happy faces after having a meal – it never gets old.

What’s your favourite food and beverage pairing?

Chocolate and whisky.

What’s one of the most memorable moments of your chef career?

I had the awesome opportunity to meet and cook in the presence of Chef Thomas Keller, Chef Alain Passard and Chef Pascal Barbot.

The perfect day off would be…

… beer and TV at home.

What do you do for fun?

I play Call Of Duty.

What’s something you’d like people to know about being a chef as a profession?

A chef needs love, passion and perseverance.

What’s your view on the hospitality industry in Malaysia?

It is constantly growing. We’ve seen a lot of talented chefs bringing fresh and creative movements back to the country.

What’s in store for you in the upcoming months?

We’ll be working on a new alfresco cafe in the grounds of Cheong Fatt Tze – The Blue Mansion. It will serve good coffee, delicious snacks and comfort food. It’s something new for us, so we are all pretty pumped up about it!
