Rémy Martin 1738 Accord Royal made a splash on the Malaysian market this September with the #TeamUpForExcellence campaign. The product launched in collaboration with seven talents, five bars and two culinary partners. The food and beverage experts shared their favoured way to enjoy this fine Cognac.

Rémy Martin 1738 Accord Royal

Rémy Martin 1738 Accord Royal celebrates the royal approval granted to Rémy Martin by the King Louis XV of France in 1738. At the time, it was illegal to plant any new vines, but the story goes that the King enjoyed this Cognac so much that special permission was given. 

The grapes for this blend are sourced from the vineyards of Cognac, Grande Champagne and Petite Champagne. Although the requirement for VSOP is a minimum of four years of ageing, some of the eaux-de-vie in the Rémy Martin 1738 Accord Royal have seen up to 20 years in the barrel. This creates a palate with more concentrated fruits, yet the barrels contribute lightly spicy notes rather than punchy astringency. Additionally, elegant notes of vanilla and brioche are enhanced thanks to oak casks from the Limousin forest. The wide grains allow greater interaction between the wood and the eaux-de-vie, creating richer aromatics.

It’s quite delicious on its own, requiring no more than a clean glass to satisfy. However, its affordability also encourages use in cocktails and food, some of which we’ll explore below.

David Hans, Three X Co

David Hans, head bartender and co-founder of Three X Co (ranked 70 in Asia’s 50 Best Bars 2022), uses Rémy Martin 1738 Accord Royal in his Le Royal Whisper cocktail. It combines the Cognac with Mount Gay Black Barrel Rum, glutinous rice tea, mango, passionfruit and honey. The flavour is tropical with the natural fruity vanilla sweetness of the Cognac, accompanied by a black tea after-taste from the glutinous rice.

Le Royal Whisper

Ck Kho, Coley Cocktail Bar

Ck Kho, head bartender and founder of Coley Cocktail Bar (The Bar Awards 2017 Bartender of the Year and No. 100 in Asia’s 50 Best Bars 2022), brings new light to Rémy Martin 1738 Accord Royal in his Delima cocktail recipe. It shines alongside pomegranate shrub, creole bitters and eucalyptus extract, giving the cocktail a fruity and aromatic profile. The first sip is slightly acidic from the fruit, well-balanced with the Cognac and concludes with cooling floral notes of eucalyptus.

Koh Yung Shen, Backdoor Bodega

The next creation comes from Koh Yung Shen (The Bar Awards Bartender of the Year -Penang, 2019), head bartender and founder of Backdoor Bodega (97th on Asia’s 50 Best Bars 2022), one of Penang’s hippest speakeasies. His Biggie Smalls cocktail fuses Rémy Martin 1738 Accord Royal with French vermouth, Italian cherry, orange herbal amer and carciofo amaro. It has a complex, fruity palate with a sweet start and dry finish.

Julian Benjamin Brigget, Bar Trigona

Julian Benjamin Brigget, assistant bar manager of Bar Trigona (Best International Hotel Bar in Asia by Tales of the Cocktail Foundation 2022), explores local and sustainable ingredients to pair with the Cognac in the cocktail in the spirit-forward Grapa da Vine. The Cognac balances sous vide pineapple, grappa, bitters and trigona honey, giving it a light bitterness, sourness and a hint of sweetness.

Anand Pirinyuang, Junglebird

The final cocktail creation in this series is thanks to Anand Pirinyuang, general manager of Junglebird (five years consecutive placing in Asia’s 50 Best Bars). Anand crafts a story with every sip of the Punching An Accord. The smooth Cognac joins house-made orange and lemon sherbet, Pedro Ximenez sherry and red wine reduction to create a boozier, spirit-forward take on an old-school cognac punch. Its full-bodied strength is the first impression rounding into sweet lemony-orange notes followed by a hint of chocolate and lingering nuances of fruitcake.

Xiao-Ly Koh, Xiao By Crustz

Xiao-Ly Koh, pastry chef and founder of Xiao by Crustz, proves that it’s not only cocktails that can be elevated with a splash of Rémy Martin 1738 Accord Royal but dessert too! Her Rémy Mont Blanc is founded in the tradition of classic French desserts with a modern influence in taste and presentation. This recipe features a chocolate orange cognac and chestnut vanilla cognac, balanced in flavour and texture.

Chef Raymond Tham, Beta KL

To conclude, Chef Raymond Tham, co-owner and head chef of Beta KL pushes the boundaries using Rémy Martin 1738 Accord Royal to add depth to his Smoked Tongkol Fish Rillettes. The Cognac elevates the creaminess of the mascarpone with its round oakiness. Cognac jelly accompanies the dish, served with a French butter croissant.
